Organic is a certification. Certification costs money and paperwork that a smallholder farming a hillside plot cannot reach.

Calling this coffee organic would mean claiming a label we have not earned.

Calling it traditionally grown is simply the truth.

This turns the missing certificate into the point. Every sentence describes what is, rather than claiming a standard we cannot honestly hold.
